Today for Blog Every Day in November the topic is Something You Made and as cake is what I make the most I thought I’d share a sponge cake recipe with you.
After watching this year’s The Great British Bake Off I decided to go back to basics and start again. I wanted to make sure that I’d cracked a good Victoria Sponge cake before I start trying my hand at more adventurous bakes.
What you need
175g unsalted butter at room temperature
175g caster sugar
175g self-raising flour
3 medium eggs
jam
whipped cream (if you’re that way inclined)
icing sugar to dust
What you have to do
1. Grease two 7 inch sandwich tins and line the base with greaseproof paper. Preheat the oven to 180/gas mark 5.
2. Cream butter and sugar together until it’s pale and fluffy.
3. Add the eggs one at a time and beat in well. If it looks like it’s curdling add a spoon of flour.
4. Fold in the remaining flour with a large metal spoon.
5. Divide the mixture evenly between the tins and level the tops with a palette knife.
6. Bake in the centre of the oven for 20-25 mins until they’re golden and a skewer comes out clean.
7. Loosen the edges and leave to rest in the tins for 5 minutes.
8. Turn out onto a cooling rack and peel off the lining paper.
9. When completely cool sandwich the two cakes together with the jam and whipped cream. Dust the top with icing sugar.
Sometimes the most basic cake is a huge treat. With fancy cupcakes and cake hybrids being so popular at the moment it really is nice to sit back with a cup of tea and a slice of sponge cake.

Rubbish photography? Your Victoria sponge looks amazing. Mine always seem to sink in the middle. Did it taste as good as it looks?
